Infusion of rock tea with aromatic herbs – CONGOST OF MONT-REBEI

Description

Ingredients: Rock tea, thyme, rosemary and mint.

Fresh, balsamic and  sweet infusion.  With the flavor of the aromatic set on the palate, one can imagine the settlers of Altimiris walking between the thyme and rosemary plants, enjoying the fragance of their volatil substances. These give a slight sweetness to the infusion and take part with a compound that remind us the smell of pine. The verticality of the landscape evokes the inaccessible places where the rock tea often grows, it shares aromatic substances with the anised notes of thyme and rosemary, but, also adds resinous, bitter and wooden notes. The mint adds, evidently, fresh and menthol notes.
